Skinny Peanut Butter Cookies

I love peanut butter.  I'm not exaggerating when I say that I could live on peanut butter sandwiches.  When I found a recipe for 35 Calorie Peanut Butter Cookies, I jumped on it!

There are only four ingredients:

1 cup of fat free peanut butter
1 cup of sugar
1 egg
1 tsp baking soda

Mix the peanut butter and sugar until blended, then add the egg and baking soda and mix again.  The dough is not sticky.  Form into balls on a baking tray.  For the peanut butter cookie look, press a fork across the top in a cross hatch pattern.  Bake at 350 for 12-20 minutes.  Yes, that is a big range.  The recipe called for 8, my gas oven took about 18.  You know your oven better than me!
